Beef and offal such as tripe, tongue or heart, plus chilli oil, Sichuan pepper, soy sauce, sesame, peanuts, celery and scallions; despite the name, lung is not normally used today.

How it is usually made

The meats are separately braised until tender, cooled and sliced thinly before being dressed with an aromatic red-oil sauce.

Origin and food culture

The modern name is associated with husband-and-wife vendors in Chengdu in the early twentieth century, building on an older local tradition of sliced beef and offal served cold with a highly seasoned dressing.

The character fèi (肺, lung) survives in the name, but contemporary versions normally use beef together with cuts such as tripe, tongue or heart rather than lung.
