Concentrated seasonings are placed in the bowl, then freshly cooked noodles and a small amount of seasoned minced pork and preserved vegetables are added and mixed before eating.

Origin and food culture

The name refers to the shoulder pole, or dandan, once used by itinerant noodle sellers. The dish is associated with Sichuan street-snack traditions and is served in many regional styles.

A Chengdu-style bowl is usually compact and intensely seasoned. Sesame or peanut paste is common in some modern and overseas versions but is not a defining ingredient in every Sichuan preparation.
