Kao lengmian is generally traced to late-twentieth-century street vending in Heilongjiang, especially the Mishan area, though detailed invention stories vary.

The name is misleading in English: the noodle sheet begins as a product called lengmian but is griddled and served hot, usually with egg, sauce, vinegar and aromatics.
